Description

A moist and tender cake infused with the fresh, tart flavor of blackberries, complemented by a subtle hint of lemon. This Blackberry Cake is perfect for summer gatherings, offering a delightful blend of sweet and tangy tastes.

Ingredients

Scale
  • Cake:
    • 2 cups all-purpose flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 3/4 cup unsalted butter, room temperature
    • 1 cup granulated sugar
    • 4 large eggs
    • 1 tsp vanilla extract
    • Zest of 1 lemon
    • 1/2 cup buttermilk
    • 2 cups fresh blackberries
  • Lemon Glaze:
    • 1 cup powdered sugar
    • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. Whisk flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs, one at a time, then vanilla and lemon zest.
  3. Alternately mix in dry ingredients and buttermilk to the butter mixture. Fold in blackberries gently.
  4. Pour batter into the pan. Bake for 45-50 minutes. Cool before applying glaze.
  5. For the glaze, whisk powdered sugar and lemon juice until smooth. Drizzle over the cake.

Notes

  • If using frozen blackberries, do not thaw to prevent bleeding into the batter.
  • Lemon zest enhances the blackberry flavor, but can be omitted for a simpler taste.
